Fresh Air Run for Women and Healthy French Toast

This past weekend my best bud Jayme and I ran a 10km race with the “Fresh Air Experience Race for Women.”  Jayme had her first child nine months ago and when I mentioned this race was happening in our backyard she was all about doing it with me….stroller and all.  There was also a 1km and 3km run for children, the registration was by minimum of 5 dollar donation and the looks on those kids faces while they were running past the finish line was PRICELESS!!  They had racing bibs and everything, they were determined and HAPPY, you know, how we should all look at fitness.  The best part of participating in this race was that the proceeds were divided between Big Brothers, Big Sisters and the YMCA Strong Kids Campaign – Two causes I deeply believe in!

 Once we crossed the finish line (only ones with a stroller doing the 10km run I might add – whoop whoop) I was ready for my favorite meal of the day-BREAKFAST!  Joel and I contemplated going out for brunch but I decided I would rather make something at home to avoid potential tummy troubles later in the day.  Here is the healthy version of french toast that I made and we both ate, and Joel quite enjoyed!

Skinny French Toast

Ingredientes

Egg Whites

Cinammon

Pure Vanilla Extract

Fruit and/or Pure Maple Syrup

Bread of your choice – I use 12 grain for Joel or Sprouted Grain (gluten free) for me

Instructions

Spray pan with olive oil spray and turn on medium

Mix egg whites, cinnamon, 1/2 tsp vanilla extract in bowl

Dip bread in egg mixture on both sides (let it sit for a minute or so)

Transfer eggy bread to sprayed or greased pan

Cook for a few minutes on each side

DEVOUR!
