Gluten Free Onion Rings
Makes 3 servings
1 large onion, cut into thick slices *I did half of a white onion and half of a yellow onion-I was curious about how they would taste-Both glorious*
1/2 cup almond meal (just raw almonds ground up in a blender or food processor) *I also added Italian bread crumbs for Joel’s portion but when I was at the store I saw organic spelt bread crumbs so you can definitely make these with healthy bread crumbs if you don’t need gluten free!*

1 tsp garlic powder (not garlic salt)
2 tsp dried minced onion (could also use onion powder if you had to) *Didn’t have this so I used oregano, because I love oregano.*
1/4 tsp sea salt
1 tsp dried parsley
2 Tbsp grated fresh Parmesan cheese (use the tiny holes on your grater. What you’d use for nutmeg/cinnamon sticks) *I omitted this*
1/2 cup liquid egg whites
Preheat oven to 400 degrees F. In one shallow dish, pour in egg whites. In another dish, add all the dry ingredients. Place onion rings in egg white, then dip in dry mixture. Place on cookie sheet. Spray them with cooking spray then place in the oven. Bake for 10-12 minutes on each side.
Should make approx. 1 1/2 cookie sheets full of onion rings.
*I made one baking tray of onion rings and after cooking them 10-12 minutes on each side I left them in the oven after turning the temperature off for another 5-7 minutes because I wanted mine more crispy. These were Joel approved which means a normal person will like them, he actually ate them all before touching his potatoes and bbq chicken-Success!
